Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves, chopped
  • For the dressing:
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water to remove any bitterness.

  2. In a medium saucepan, bring the water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15 minutes or until the water is absorbed.

  3. Remove the quinoa from heat and let it cool.

  4. In a large bowl, combine the cooked quinoa, cucumber, bell pepper, cherry tomatoes, red onion, Kalamata olives, feta cheese, parsley, and mint leaves.

  5. In a small bowl, whisk together the olive oil, lemon juice, garlic, dried oregano, salt, and pepper.

  6. Pour the dressing over the salad and toss to combine.

  7. Serve chilled and enjoy!
