  • 1cupdry quinoa,rinsed well
  • cupswater
  • 1tspcinnamon,plus for sprinkling
  • 2tspvanilla extract
  • ½cupunsweetened applesauce
  • ¼cupgolden raisins
  • 1cupfat-free milk,warmed, for drizzling, non-dairy milk is fine
  • 1Gala apple,peeled and diced
  • ¼cuppecans,chopped

Instructions

  1. Combine quinoa, water, cinnamon, and vanilla in a small saucepan, and bring to a boil.

  2. Reduce to a simmer, cover, and let cook for 15 minutes until quinoa can be fluffed with a fork.

  3. Divide cooked quinoa between four bowls then stir in apple sauce, raisins, and pour in warmed milk.

  4. Top with fresh cut apples and pecans and a dash of cinnamon.
