How To Make Keto Pancakes

Ingredients

  • 4 eggs
  • 1/4 cup almond flour
  • 2 tbsp coconut flour
  • 2 tbsp unsweetened almond milk
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • Butter or coconut oil for cooking

Instructions

  1. In a large bowl, whisk together the eggs, almond flour, coconut flour, almond milk, baking powder, vanilla extract, and salt until well combined.

  2. Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or coconut oil to coat the surface.

  3. Pour 1/4 cup of the pancake batter onto the skillet, spreading it out slightly with the back of a spoon.

  4. Cook for 2-3 minutes, or until bubbles form on the surface of the pancake.

  5. Flip the pancake and cook for an additional 1-2 minutes, or until lightly golden brown.

  6. Repeat with the remaining batter.

  7. Serve the pancakes hot with your choice of toppings, such as sugar-free maple syrup, berries, or whipped cream.
