How To Make Chunky Monkey Pancakes

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips
  • 1/4 cup chopped walnuts
  • Cooking spray or butter, for greasing

Instructions

  1. In a large bowl, combine the mashed bananas, flour, sugar, baking powder, baking soda, and salt.

  2. In a separate bowl, whisk together the milk and vanilla extract. Pour the wet ingredients into the banana mixture and stir until just combined.

  3. Gently fold in the chocolate chips and chopped walnuts.

  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or butter.

  5. Pour 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.

  6. Repeat with the remaining batter.

  7. Serve the Chunky Monkey Pancakes warm with maple syrup and additional banana slices, if desired.
