How To Make Porridge with Blueberry Compote

Ingredients
- 1 cup rolled oats
- 2 cups water
- 1 cup milk
- 1/4 tsp salt
- 1/4 cup honey
- 1 tsp vanilla extract
- 2 cups blueberries
- 2 tbsp sugar
- 1 tbsp lemon juice
Instructions

In a saucepan, bring the water and salt to a boil.

Stir in the oats and reduce heat to low. Simmer for 10-15 minutes, stirring occasionally, until desired consistency is reached.

In a separate saucepan, combine the blueberries, sugar, and lemon juice. Cook over medium heat for 8-10 minutes, until the berries are soft and the mixture has thickened.

Remove both the porridge and compote from heat. Stir in the honey and vanilla extract into the porridge.

Serve the porridge in bowls and top each serving with a generous spoonful of blueberry compote. Enjoy!
