How To Make Amaranth Porridge with Green Tea & Ginger Compote

Ingredients
- 1 cup amaranth grains
- 2 cups water
- 2 cups almond milk
- 1/4 cup honey
- 1/2 tsp vanilla extract
- 2 green tea bags
- 1 inch piece of ginger, grated
- 1 tbsp maple syrup
- 1 tbsp lemon juice
- 1/4 cup sliced almonds
- Fresh berries, for garnish
Instructions

In a saucepan, bring water to a boil. Add amaranth grains and reduce heat to low. Let it simmer for 25-30 minutes, or until grains are tender.

In another saucepan, heat almond milk, honey, and vanilla extract over low heat. Keep stirring until well combined.

Add the green tea bags to the almond milk mixture and let it steep for 5 minutes. Remove the tea bags and discard them.

In a separate small saucepan, combine grated ginger, maple syrup, and lemon juice. Cook over low heat for 5 minutes, stirring occasionally.

To serve, divide the cooked amaranth porridge into bowls. Top with the green tea and ginger compote. Sprinkle sliced almonds and fresh berries on top for garnish.
