Ingredients

  • 8 large egg whites
  • 1/2 tsp salt
  • 1 cup spinach, chopped
  • 1/2 cup red bell pepper, diced
  • 1/4 cup green onions, sliced
  • 1/4 cup reduced-fat cheddar cheese, shredded

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly coat a baking dish with non-stick spray.

  2. In a large bowl, whisk the egg whites and salt together until frothy.

  3. Stir in the chopped spinach, diced red bell pepper, and sliced green onions.

  4. Pour the egg white mixture into the prepared baking dish and spread it evenly.

  5. Sprinkle the shredded cheddar cheese on top.

  6. Bake for 25 minutes or until the egg whites are set and lightly golden.

  7. Remove from the oven and let it cool for a few minutes before serving.
