How To Make Tender Potato Biscuits

- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 1 cup mashed potatoes
- 1/2 cup buttermilk
- 1/4 cup chopped fresh chives
Instructions

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, baking powder, and salt. Add the cold butter and use your fingers or a pastry cutter to incorporate it into the flour mixture until it resembles coarse crumbs.

Stir in the mashed potatoes, buttermilk, and chives until just combined. Do not overmix.

Turn the dough out onto a lightly floured surface. Knead lightly until it comes together, then pat it into a 1-inch thick rectangle. Using a biscuit cutter, cut out biscuits and place them on the prepared baking sheet.

Bake for 12-15 minutes, or until the biscuits are golden brown on top.
