Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cooked and mashed sweet potato
  • 1/4 cup cold unsalted butter, cubed
  • 3 tbsp buttermilk
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a large bowl, mix together flour, sugar, baking powder, and salt.

  3. Cut in cold butter until mixture is pea-sized crumbles.

  4. Stir in mashed sweet potato and buttermilk until a soft dough forms.

  5. Turn out dough onto a floured surface and knead gently.

  6. Pat dough into a 1-inch thickness and cut into rounds with a biscuit cutter.

  7. Place on a greased baking sheet and bake in preheated oven for 20-25 minutes until golden brown.

  8. Enjoy warm with honey or butter.
