How To Make Sugar-Crusted Bara Brith

Ingredients
- 2 cups mixed dried fruit (such as raisins, currants, and chopped dates)
- 1 cup strong hot tea
- 1/4 cup brown sugar
- 1 3/4 cups self-rising flour
- 1/2 tsp mixed spice (optional)
- 1/4 tsp ground cinnamon
- Zest of 1 orange
- 1 tbsp melted butter
- 1/4 cup granulated sugar, for the crust
Instructions

In a bowl, combine the dried fruit, hot tea, and brown sugar. Stir well and let it soak for 1 hour, or overnight.

Preheat the oven to 350°F (180°C). Grease and line a loaf pan with parchment paper.

In a separate bowl, sift the self-rising flour, mixed spice (if using), and ground cinnamon.

Add the soaked fruit mixture, orange zest, and melted butter to the dry ingredients. Stir until well combined.

Pour the batter into the prepared loaf pan and smooth the top.

Sprinkle the granulated sugar evenly over the top.

Bake in the preheated oven for 1 hour to 1 hour 15 minutes, or until a skewer inserted into the center comes out clean.

Allow the bara brith to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
