Ingredients

  • 1.5 pounds beef stew meat, cut into cubes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 red bell peppers, sliced
  • 2 tablespoons paprika
  • 1 teaspoon caraway seeds
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (14 ounces) diced tomatoes
  • 2 cups beef broth
  • 1/4 cup sour cream (for serving)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a slow cooker, combine beef stew meat, onion, garlic, bell peppers, paprika, caraway seeds, dried thyme, salt, and black pepper.

  2. Stir in diced tomatoes and beef broth.

  3. Cover and cook on low heat for 8 hours, or on high heat for 4 hours.

  4. Serve hot with a dollop of sour cream and garnish with fresh parsley.
