Ingredients

  • 1 lb beef, thinly sliced
  • 2 oranges, segmented
  • 1 bell pepper, sliced
  • 1 onion, thinly sliced
  • 3 cloves of garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp soy sauce
  • 2 tbsp orange juice
  • 1 tsp cornstarch
  • 1 tbsp vegetable oil
  • Salt and pepper to taste
  • Steamed rice, for serving

Instructions

  1. In a small bowl, whisk together soy sauce, orange juice, and cornstarch. Set aside.

  2. Heat vegetable oil in a large skillet or wok over high heat.

  3. Add beef slices and stir-fry until browned and cooked through. Remove beef from the skillet and set aside.

  4. In the same skillet, add onion, bell pepper, garlic, and ginger. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.

  5. Return the beef to the skillet and pour in the soy sauce mixture. Cook for another 2 minutes until the sauce thickens.

  6. Add orange segments and gently stir to combine. Cook for an additional minute.

  7. Season with salt and pepper to taste.

  8. Serve the beef and orange stir-fry over steamed rice.
