  • 1 lb beef sirloin, thinly sliced
  • 1 bunch asparagus, trimmed and cut into bite-sized pieces
  • 1 cup sugar snap peas
  • 2 tbsp green curry paste
  • 1 tbsp vegetable oil
  • 1 cup coconut milk
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 lime, juiced
  • Fresh cilantro, for garnish

Instructions

  1. In a large skillet or wok, heat the vegetable oil over high heat.

  2. Add the beef slices and stir-fry for 2-3 minutes, until browned. Remove from the skillet and set aside.

  3. In the same skillet, add the green curry paste and cook for 1 minute, stirring constantly.

  4. Add the asparagus and sugar snap peas to the skillet and stir-fry for 2-3 minutes, until crisp-tender.

  5. Return the beef to the skillet and add the coconut milk, fish sauce, soy sauce, brown sugar, and lime juice. Stir well to combine.

  6. Cook for an additional 2-3 minutes, until the sauce has thickened slightly and the beef is cooked to your liking.

  7. Serve the stir-fry green curry beef with asparagus and sugar snaps over steamed rice or noodles.

  8. Garnish with fresh cilantro before serving.
