How To Make Minted Pea, Goat’s Cheese & Spinach Wraps

Serves:

Ingredients

  • 2 cups frozen peas
  • 1/4 cup fresh mint leaves, chopped
  • 4 tortilla wraps
  • 1 cup crumbled goat’s cheese
  • 2 cups fresh spinach leaves
  • Salt and pepper to taste

Instructions

  1. Cook the frozen peas in boiling water for 2-3 minutes until tender. Drain and transfer to a bowl.

  2. Add the chopped mint leaves to the peas and mash together with a fork. Season with salt and pepper.

  3. Spread the minted pea mixture onto each tortilla wrap.

  4. Sprinkle crumbled goat’s cheese evenly over the pea mixture.

  5. Place a handful of fresh spinach leaves on top of the cheese.

  6. Roll up the wraps tightly and slice in half diagonally.

  7. Serve as is or lightly toast the wraps in a panini press for a warm wrap.
