Ingredients
- 1 sheet of puff pastry, thawed
- 2 cups of fresh spinach, chopped
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of grated Parmesan cheese
- 1 clove of garlic, minced
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a bowl, combine the chopped spinach, feta cheese, Parmesan cheese, garlic, salt, and pepper.

On a lightly floured surface, roll out the puff pastry sheet into a rectangle.

Spread the spinach mixture evenly over the puff pastry, leaving a small border around the edges.

Starting from one long side, tightly roll the puff pastry into a log shape.

Slice the log into 1-inch thick rolls and place them on the prepared baking sheet.

Brush the tops of the rolls with the beaten egg wash.

Bake for 20-25 minutes, or until the rolls are golden brown and crispy.
