Ingredients
- 1 sheet of puff pastry
- 1 large sweet potato, peeled and thinly sliced
- 1 large red onion, thinly sliced
- 150g goat’s cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper, to taste
Instructions

Preheat the oven to 200°C (400°F).

Roll out the puff pastry sheet and place it on a baking tray lined with parchment paper.

In a bowl, toss the sweet potato slices with 1 tbsp of olive oil, balsamic vinegar, salt, and pepper.

Arrange the sweet potato slices evenly over the puff pastry, leaving a small border around the edges.

In another bowl, toss the onion slices with 1 tbsp of olive oil, salt, and pepper.

Spread the onion slices over the sweet potatoes.

Sprinkle the crumbled goat’s cheese evenly over the tart.

Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown.
