Ingredients

  • 1 sheet of puff pastry
  • 200g goat’s cheese
  • 1 fennel bulb, thinly sliced
  • 1 roasted red pepper, thinly sliced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Roll out the puff pastry and place it on a baking sheet.

  3. Crumble the goat’s cheese over the pastry, leaving a border around the edges.

  4. Arrange the fennel and roasted red pepper slices on top of the cheese.

  5. Drizzle with olive oil and season with salt and pepper.

  6. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and the cheese is melted.

  7. Garnish with fresh basil leaves before serving.
