Ingredients

  • 250g chicken livers
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 sprigs of fresh thyme
  • 1 tbsp butter
  • 2 tbsp brandy
  • 1 tbsp dijon mustard
  • salt and pepper to taste
  • baguette, sliced and toasted, for serving
  • cornichons, for serving

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the diced onion, minced garlic, and fresh thyme leaves. Cook until the onion is translucent and fragrant, about 5 minutes.

  2. Add the chicken livers to the skillet and cook until they are browned on the outside but still slightly pink on the inside, about 4-5 minutes.

  3. Pour in the brandy and let it reduce for a minute. Remove the skillet from the heat and let it cool for a few minutes.

  4. Transfer the mixture to a food processor or blender. Add the dijon mustard, salt, and pepper. Blend until smooth and creamy.

  5. Transfer the pâté to a serving dish and refrigerate for at least 2 hours to allow the flavors to meld together.

  6. Serve the pâté with toasted baguette slices and cornichons on the side.
