How To Make Feta Cheese Foldovers

Ingredients

  • 1 sheet of puff pastry, thawed
  • 1 cup of crumbled feta cheese
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of chopped sun-dried tomatoes
  • 1/4 cup of chopped kalamata olives
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Roll out the puff pastry sheet into a square or rectangle, about 1/8 inch thick.

  3. Cut the pastry into 4 equal squares.

  4. In a bowl, mix together the crumbled feta cheese, parsley, sun-dried tomatoes, and kalamata olives.

  5. Place a spoonful of the feta cheese mixture in the center of each pastry square.

  6. Fold the pastry over to create a triangle, pressing the edges firmly to seal.

  7. Brush the tops of the foldovers with the beaten egg wash.

  8. Transfer the foldovers to the prepared baking sheet.

  9. Bake in the preheated oven for 18-20 minutes, or until the pastry is golden brown and crispy.

  10. Remove from the oven and let cool for a few minutes before serving.
