How To Make Crispy Grilled Feta with Saucy Butter Beans

Ingredients
- 8 oz feta cheese
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 2 cloves garlic, minced
- 1 can butter beans, drained and rinsed
- 1 cup vegetable broth
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions

Preheat the grill to high heat.

In a small bowl, mix together the olive oil, dried oregano, red pepper flakes, and minced garlic.

Cut the feta cheese into thick slices and brush both sides with the olive oil mixture.

Place the feta cheese slices on the grill and cook for 2-3 minutes on each side, until crispy and golden brown.

In a separate saucepan, heat the butter beans, vegetable broth, lemon juice, salt, and pepper over medium heat. Simmer for 10 minutes until the beans are tender and the sauce has thickened.

Serve the grilled feta cheese on a platter and top with the saucy butter beans. Garnish with chopped fresh parsley.
