This Mahon con Membrillo makes the perfect Spanish tapa that’s made using quince paste, Mahon cheese, and sherry vinegar for a tasty appetizer.

Ingredients

  • lbmahon cheese
  • ¼lbmembrillo,(Spanish quince paste)
  • ½cupspanish extra virgin olive oil
  • 3tbspsherry vinegar
  • sea salt,to taste
  • 4sprigsfresh dill

Instructions

  1. Cut the cheese and membrillo into ½-inch cubes. Place 2 or 3 cubes of each on Chinese-style soup spoons.

  2. Whisk the olive oil and vinegar together in a mixing bowl. Spoon the dressing over the cheese and membrillo. Season to taste with salt and garnish with dill.

  3. Serve and enjoy.
