How To Make Spiced Christmas Gammon with Membrillo Glaze

Ingredients
- 1.5 kg gammon joint
- 2 onions, sliced
- 4 cloves of garlic, minced
- 2 tsp ground cloves
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp ground nutmeg
- 4 tbsp membrillo (quince paste)
- 2 tbsp honey
- 2 tbsp Dijon mustard
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions

Preheat the oven to 180°C (350°F).

Score the skin of the gammon joint in a criss-cross pattern. Place the joint in a large roasting pan.

In a small bowl, mix together the cloves, cinnamon, ginger, nutmeg, salt, and pepper. Rub the spice mixture all over the gammon joint.

Scatter the sliced onions and minced garlic around the gammon joint in the roasting pan.

In a saucepan, combine the membrillo, honey, Dijon mustard, and olive oil. Heat over low heat until the membrillo has melted and the ingredients have combined.

Pour the membrillo glaze over the gammon joint and onions in the roasting pan.

Cover the roasting pan with foil and roast in the preheated oven for 1 hour.

Remove the foil and increase the oven temperature to 200°C (400°F). Cook for another 30 minutes, or until the gammon is cooked through and the glaze is sticky and caramelized.

Remove from the oven and let the gammon rest for 10 minutes before slicing.

Serve the spiced Christmas gammon with the caramelized onions and any remaining glaze.
