  • 4 heads of chicory, halved
  • 4 slices of bacon
  • 2 tbsp olive oil
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the halved chicory heads on a baking sheet and drizzle with olive oil. Season with salt, pepper, and thyme leaves.

  3. Wrap each halved chicory head with a slice of bacon, securing it with a toothpick if necessary.

  4. Roast in the preheated oven for 15-20 minutes or until the chicory is tender and the bacon is crispy.

  5. Remove from the oven and let it cool for a few minutes before serving.
