How To Make Bourbon Biscuits

Ingredients

  • 150g all-purpose flour
  • 50g unsweetened cocoa powder
  • 100g granulated sugar
  • 100g unsalted butter, at room temperature
  • 1 tsp vanilla extract
  • 2-3 tbsp milk
  • 100g dark chocolate, melted

Instructions

  1. In a large bowl, whisk together the flour, cocoa powder, and sugar.

  2. Add the butter and mix until the dough resembles fine breadcrumbs.

  3. Add the vanilla extract and 2 tbsp of milk, then mix until the dough comes together. Add more milk if needed.

  4. Roll out the dough between two sheets of parchment paper to about 1/4 inch thick.

  5. Use a small round cookie cutter to cut out biscuit shapes and place them on a baking tray lined with parchment paper.

  6. Bake at 180°C (350°F) for 10 minutes or until the biscuits are firm.

  7. Allow the biscuits to cool completely.

  8. Spread a teaspoon of melted dark chocolate onto a biscuit and sandwich it with another biscuit.

  9. Repeat with the remaining biscuits.

  10. Allow the chocolate filling to set before serving.
