How To Make Whole Grain Vegetable Stir-Fry
A healthy, colorful and delicious stir-fry packed full of veggies and hearty whole grains.
Serves:
Ingredients
- 1 cup quinoa, rinsed
- 2 cups of water or vegetable broth
- 1 tablespoon olive oil
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup broccoli florets
- 1/2 cup edamame
- 1 tablespoon minced ginger
- 2 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- salt and pepper to taste
Instructions

Cook quinoa according to package instructions.

Heat oil in a wok or large skillet over medium-high heat.

Add onion and garlic, and stir-fry for 2-3 minutes until onion becomes translucent.

Add bell pepper, zucchini, broccoli and edamame to the skillet and cook for 5-7 minutes until vegetables are tender.

Add ginger, soy sauce and hoisin sauce, and stir-fry for an additional 1-2 minutes.

Gently fold in cooked quinoa and stir until well combined.

Season with salt and pepper to taste.

Serve hot and enjoy!
