How To Make Whole Grain Vegetable Stir-Fry

A healthy, colorful and delicious stir-fry packed full of veggies and hearty whole grains.

Serves:

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups of water or vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 1/2 cup edamame
  • 1 tablespoon minced ginger
  • 2 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions.

  2. Heat oil in a wok or large skillet over medium-high heat.

  3. Add onion and garlic, and stir-fry for 2-3 minutes until onion becomes translucent.

  4. Add bell pepper, zucchini, broccoli and edamame to the skillet and cook for 5-7 minutes until vegetables are tender.

  5. Add ginger, soy sauce and hoisin sauce, and stir-fry for an additional 1-2 minutes.

  6. Gently fold in cooked quinoa and stir until well combined.

  7. Season with salt and pepper to taste.

  8. Serve hot and enjoy!
