  • 6slicesbacon
  • ½cupunsalted butter
  • 1cuponions,chopped
  • 1cupcelery,chopped
  • ½cupcarrots,chopped
  • 1cupleeks,chopped
  • 2oranges
  • 1tbspfresh thyme
  • 1tbspfresh rosemary
  • salt and pepper
  • 4cupsItalian bread,(day‐old)


  1. Sauté bacon in large frying pan till crisp, remove and set aside. Drain oil and wipe pan.

  2. Melt half a cup butter in same pan over medium heat. Add onions, celery, carrots, and leeks; sauté until soft, for about 8 to 10 minutes.

  3. Raise heat and add the orange juice; cook until most of the liquid has reduced. Add the grated orange, herbs, bacon, salt, and pepper to pan and mix well.

  4. Now add 4 cups of day‐old Italian bread cubes to the onion mixture and toss to mix. Adjust seasoning and stuff into turkey, chicken, or duck.
