Ingredients

  • 1 pound Brussels sprouts
  • 1 cup white vinegar
  • 1 cup water
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 2 garlic cloves, minced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon mustard seeds

Instructions

  1. Trim the ends of the Brussels sprouts and cut them in half.

  2. In a medium saucepan, combine vinegar, water, sugar, salt, garlic, red pepper flakes, and mustard seeds. Bring to a boil.

  3. Add the Brussels sprouts to the boiling liquid and cook for 3-4 minutes, until slightly tender.

  4. Remove the saucepan from heat and let the Brussels sprouts cool in the liquid.

  5. Once cooled, transfer the pickled Brussels sprouts and liquid to a jar or airtight container.

  6. Refrigerate for at least 24 hours before serving.
