  • 4 large potatoes, boiled and diced
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon white vinegar
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mayonnaise, Dijon mustard, and white vinegar. Mix well.

  2. Add the diced potatoes, red onion, and parsley to the bowl. Gently fold them into the dressing until fully coated.

  3. Season with salt and pepper to taste. Mix again.

  4. Refrigerate for at least 2 hours before serving to allow the flavors to meld together.

  5. Serve chilled and enjoy!
