- 4 large potatoes, boiled and diced
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon white vinegar
- 1/4 cup chopped red onion
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste

In a large bowl, combine the mayonnaise, Dijon mustard, and white vinegar. Mix well.

Add the diced potatoes, red onion, and parsley to the bowl. Gently fold them into the dressing until fully coated.
