Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 cup frozen peas
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups mashed potatoes

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.

  3. Add the diced onion, minced garlic, diced carrot, and diced celery to the skillet. Cook for 5 minutes, until the vegetables have softened.

  4. Stir in the frozen peas, beef broth, tomato paste, dried oregano, dried basil, salt, and black pepper. Simmer for 10 minutes.

  5. Transfer the beef mixture to a 9×9 inch baking dish.

  6. Spread the mashed potatoes evenly over the top of the beef mixture.

  7. Bake for 20-25 minutes, until the potatoes are golden brown.

  8. Serve hot and enjoy!
