Ingredients

  • 4 salmon fillets
  • 1 lemon, sliced
  • 1 kg potatoes, boiled and diced
  • 1/2 red onion, finely chopped
  • 1/2 cup fresh dill, chopped
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Place the salmon fillets on a baking sheet lined with foil. Season with salt and pepper, and place lemon slices on top.

  3. Roast the salmon in the preheated oven for 20-25 minutes, or until cooked through.

  4. In a large bowl, combine the diced potatoes, red onion, and fresh dill.

  5. In a small bowl, whisk together the mayonnaise and Dijon mustard. Pour the dressing over the potato salad and mix well.

  6. Serve the slow-roasted salmon with a generous portion of potato salad on the side. Garnish with additional dill, if desired.
