Ingredients

  • 4 medium potatoes, peeled and diced
  • 1/2 cup diced celery
  • 1/4 cup chopped onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped pickles
  • 1/2 cup mayo
  • 2 tbsp dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until fork-tender. Drain and let cool.

  2. In a large bowl, combine the cooled potatoes with celery, onion, parsley, and pickles.

  3. In a small bowl, mix together mayo, dijon mustard, apple cider vinegar, sugar, salt, and pepper to make the dressing.

  4. Pour the dressing over the potato mixture and toss to coat.

  5. Chill the potato salad for at least 1 hour before serving.
