  • 1 lb of carrots, peeled and sliced into rounds
  • 2 tbsp of maple syrup
  • 1 tbsp of dijon mustard
  • 1 tbsp of olive oil
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, whisk together the maple syrup, dijon mustard, olive oil, salt, and pepper.

  3. Place the sliced carrots in a single layer on a baking sheet.

  4. Drizzle the maple-mustard glaze over the carrots and toss until well coated.

  5. Bake in the preheated oven for 15-20 minutes, or until the carrots are tender and slightly caramelized.

  6. Remove from the oven and garnish with fresh parsley before serving.
