Ingredients
- 1 lb of carrots, peeled and sliced into rounds
- 2 tbsp of maple syrup
- 1 tbsp of dijon mustard
- 1 tbsp of olive oil
- Salt and pepper to taste
- Fresh parsley, for garnish

Preheat the oven to 400°F (200°C).

In a small bowl, whisk together the maple syrup, dijon mustard, olive oil, salt, and pepper.

Place the sliced carrots in a single layer on a baking sheet.

Drizzle the maple-mustard glaze over the carrots and toss until well coated.

Bake in the preheated oven for 15-20 minutes, or until the carrots are tender and slightly caramelized.
