Ingredients

  • 4 poussins
  • 1 cup maple syrup
  • 1/4 cup bourbon
  • 2 tbsp soy sauce
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 cups cornbread, crumbled
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup chicken broth
  • 1/4 cup dried cranberries
  • 2 tbsp butter

Instructions

  1. Preheat the oven to 375°F (190°C). Place the poussins in a roasting pan.

  2. In a small bowl, whisk together the maple syrup, bourbon, soy sauce, Dijon mustard, olive oil, salt, and pepper. Pour half of the glaze over the poussins, reserving the remaining half.

  3. Roast the poussins in the preheated oven for 20 minutes. Brush them with the remaining glaze and continue to roast for another 20-25 minutes, or until the poussins are cooked through and the glaze is sticky and caramelized.

  4. While the poussins are roasting, prepare the cornbread stuffing. In a large skillet, melt the butter over medium heat. Add the chopped onion and celery, and cook until softened.

  5. Stir in the crumbled cornbread, dried cranberries, and chicken broth. Cook for a few minutes, until the cornbread is heated through and the stuffing is well combined.

  6. Serve the glazed poussins hot, accompanied by the cornbread stuffing. Enjoy!
