Ingredients

  • 4 oranges
  • 2 lemons
  • 1 grapefruit
  • 1 cup granulated sugar
  • 1 cup water
  • 1/4 cup whisky
  • 1-2 tablespoons pink peppercorns

Instructions

  1. Peel the oranges, lemons, and grapefruit, removing as much pith as possible. Slice the peels into thin strips.

  2. In a large saucepan, combine the sliced peels, sugar, and water. Bring to a boil over high heat, then reduce to a simmer.

  3. Cook the mixture for 30 minutes, stirring occasionally, until the peels are soft and translucent.

  4. Stir in the whisky and pink peppercorns. Cook for an additional 15 minutes to allow the flavors to meld together.

  5. Remove from heat and let the marmalade cool before transferring to sterilized jars.

  6. Store in the refrigerator for up to 2 weeks.
