Ingredients

  • 1 cup dried chickpeas
  • 1/2 cup fresh parsley
  • 1/2 cup fresh cilantro
  • 1/4 cup chopped onion
  • 4 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons flour
  • Oil for frying
  • 1 cup cooked quinoa
  • 1/2 cup cherry tomatoes, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup chickpeas, cooked or canned
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • Salt to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Place dried chickpeas in a bowl and cover with water. Let soak overnight. Drain well before using.

  2. In a food processor, combine soaked chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, black pepper, cayenne pepper, and flour. Pulse until mixture is well combined and forms a coarse paste.

  3. Shape the mixture into small balls or patties.

  4. Heat oil in a frying pan over medium heat. Fry the falafels until golden brown and crispy on all sides. Remove from the pan and drain on paper towels.

  5. In a separate bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, lemon juice, olive oil, salt, and pepper. Mix well to combine.

  6. In another bowl, combine chickpeas, tahini, garlic, lemon juice, olive oil, salt, and chopped parsley. Blend until smooth and creamy.

  7. Serve the falafels with the quinoa tabbouleh salad and drizzle with the hummus sauce.
