- For the veggie koftas:
- 2 cups grated vegetables (carrots, zucchini, bell peppers)
- 1 cup breadcrumbs
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- Salt and pepper to taste
- Oil for frying
- For the pick & mix sides:
- 4 whole wheat pittas
- Hummus
- Tzatziki
- Sliced cucumber
- Shredded lettuce
- Sliced tomatoes
- Sliced red onions
Instructions

Preheat the oven to 375°F (190°C).

In a large bowl, combine the grated vegetables, breadcrumbs, feta cheese, cilantro, garlic, cumin, coriander, salt, and pepper. Mix well.

Shape the mixture into small patties and fry them in oil until golden brown on each side. Transfer to a baking sheet and bake for 15 minutes.

Warm the pittas in the oven or on a stovetop grill.

To assemble, spread hummus and tzatziki inside each pitta pocket. Fill with veggie koftas, sliced cucumber, shredded lettuce, sliced tomatoes, and sliced red onions.
