How To Make Lebanese Chicken Wraps

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper, to taste
  • 4 large whole wheat tortillas
  • 1 cup hummus
  • 1 cup chopped cucumber
  • 1 cup chopped tomato
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • Juice of 1 lemon
  • 1/4 cup plain Greek yogurt

Instructions

  1. Preheat the grill or a skillet over medium-high heat.

  2. In a small bowl, combine the olive oil, minced garlic, cumin, coriander, paprika, turmeric, salt, and pepper.

  3. Rub the chicken breasts with the spice mixture and grill/sear for about 6-7 minutes on each side, or until cooked through.

  4. Remove the chicken from the heat and let it rest for a few minutes. Slice the chicken into thin strips.

  5. Warm the tortillas on the grill or skillet for about 30 seconds on each side.

  6. Spread 1/4 cup of hummus onto each tortilla, leaving about an inch border.

  7. Top with sliced chicken, cucumber, tomato, red onion, parsley, lemon juice, and a dollop of Greek yogurt.

  8. Roll up the wraps tightly, tucking in the sides as you go.

  9. Cut each wrap in half diagonally and serve.
