How To Make Spinach Falafel & Hummus Bowl

Ingredients
- 2 cups of spinach leaves
- 1 can of chickpeas, drained and rinsed
- 3 cloves of garlic
- 1/2 cup of fresh parsley
- 1/2 cup of breadcrumbs
- 1 tsp of ground cumin
- 1 tsp of ground coriander
- Salt and pepper to taste
- 1/4 cup of flour
- 1/4 cup of olive oil
- 1 cup of hummus
- 2 cups of cooked quinoa
- 1 cucumber, diced
- 1 tomato, diced
- 1/4 cup of chopped red onion
- 1/4 cup of chopped fresh parsley
- Juice of 1 lemon
Instructions

In a food processor, combine spinach, chickpeas, garlic, parsley, breadcrumbs, cumin, coriander, salt, and pepper. Pulse until well combined.

Shape the mixture into small falafel balls.

Heat olive oil in a pan over medium heat. Cook the falafel balls until crispy and golden brown, about 4-5 minutes per side. Remove from pan and set aside.

In a large bowl, combine quinoa, cucumber, tomato, red onion, fresh parsley, and lemon juice. Toss to combine.

To assemble the bowls, divide the quinoa mixture among 4 bowls. Top each bowl with falafel balls and a generous scoop of hummus.
