How To Make Spinach Falafel & Hummus Bowl

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Serves:

Ingredients

  • 2 cups of spinach leaves
  • 1 can of chickpeas, drained and rinsed
  • 3 cloves of garlic
  • 1/2 cup of fresh parsley
  • 1/2 cup of breadcrumbs
  • 1 tsp of ground cumin
  • 1 tsp of ground coriander
  • Salt and pepper to taste
  • 1/4 cup of flour
  • 1/4 cup of olive oil
  • 1 cup of hummus
  • 2 cups of cooked quinoa
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1/4 cup of chopped red onion
  • 1/4 cup of chopped fresh parsley
  • Juice of 1 lemon

Instructions

  1. In a food processor, combine spinach, chickpeas, garlic, parsley, breadcrumbs, cumin, coriander, salt, and pepper. Pulse until well combined.

  2. Shape the mixture into small falafel balls.

  3. Heat olive oil in a pan over medium heat. Cook the falafel balls until crispy and golden brown, about 4-5 minutes per side. Remove from pan and set aside.

  4. In a large bowl, combine quinoa, cucumber, tomato, red onion, fresh parsley, and lemon juice. Toss to combine.

  5. To assemble the bowls, divide the quinoa mixture among 4 bowls. Top each bowl with falafel balls and a generous scoop of hummus.

  6. Serve immediately and enjoy!
