  • 1.5 kg ripe tomatoes
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of water to a boil. Score a small “X” on the bottom of each tomato and blanch them in the boiling water for 30 seconds. Remove and place in a bowl of ice water to cool. Peel off the skins and chop the tomatoes.

  2. In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant.

  3. Add the chopped tomatoes, sugar, dried basil, dried oregano, salt, and pepper to the saucepan. Stir well to combine. Bring the mixture to a simmer.

  4. Reduce the heat to low and let the sauce simmer, uncovered, for 1 hour. Stir occasionally to prevent sticking.

  5. After an hour, taste the sauce and adjust the seasoning if needed. If you prefer a smoother sauce, you can use an immersion blender or transfer the sauce to a blender and puree until smooth.

  6. Remove the sauce from the heat and let it cool slightly before serving. Use immediately or store in an airtight container in the refrigerator for up to a week.
