  • 2 large red onions, thinly sliced
  • 1 cup white vinegar
  • 1/4 cup granulated sugar
  • 1 tablespoon salt
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon red pepper flakes

Instructions

  1. In a medium-sized saucepan, combine the vinegar, sugar, salt, peppercorns, mustard seeds, and red pepper flakes. Bring to a boil.

  2. Add the sliced onions to the boiling mixture and let simmer for 2 minutes.

  3. Remove from heat and let the onions cool in the pickling liquid for at least 10 minutes.

  4. Transfer the pickled onions to an airtight container and refrigerate for at least 1 hour before serving.

  5. Serve as a side or topping for burgers and sandwiches.
