  • 2 tablespoons curry powder
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon ginger, grated
  • 1 can (14 ounces) coconut milk
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. In a large saucepan, heat the vegetable oil over medium heat. Add the diced onion, minced garlic, and grated ginger. Cook until the onion is translucent and the garlic and ginger are fragrant.

  2. Stir in the curry powder and cook for another minute to toast the spices.

  3. Add the coconut milk, vegetable broth, soy sauce, honey, and lime juice to the saucepan. Season with salt and pepper to taste.

  4. Bring the sauce to a simmer and let it cook for about 10 minutes, stirring occasionally.

  5. Remove the sauce from the heat and let it cool slightly. Transfer the sauce to a blender or use an immersion blender to purée until smooth.

  6. Return the sauce to the saucepan and heat over low heat until warmed through.

  7. Serve the curry sauce with your favorite dishes like chicken, vegetables, or rice.
