How To Make Curry Coconut Fish Parcels

Ingredients
- 4 white fish fillets (such as cod or tilapia)
- 1 can (400 ml) coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- 1 red chili, thinly sliced
- Fresh cilantro, for garnish
- Salt and pepper, to taste
Instructions

Preheat the oven to 400°F (200°C).

In a bowl, mix together the coconut milk, red curry paste, fish sauce, lime juice, brown sugar, grated ginger, minced garlic, and sliced chili.

Season the fish fillets with salt and pepper on both sides.

Place each fish fillet on a sheet of aluminum foil or parchment paper, and fold up the edges to create a parcel.

Pour the coconut curry sauce over the fish fillets, making sure it is evenly distributed.

Fold the foil or parchment paper to seal the parcels tightly.

Place the parcels on a baking sheet and bake for 20-25 minutes until the fish is cooked through and flakes easily with a fork.

Remove the parcels from the oven and carefully open them.
