Ingredients

  • 500g prawns, peeled and deveined
  • 1 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 cup coconut milk
  • 2 tbsp Thai red curry paste
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. Heat the vegetable oil in a large pan over medium heat. Add the onion and garlic, and sauté until softened.

  2. Add the red bell pepper and cook for another 2 minutes.

  3. Stir in the Thai red curry paste and cook for a minute to release its flavors.

  4. Pour in the coconut milk and bring to a simmer.

  5. Add the prawns, fish sauce, soy sauce, and sugar. Stir well to combine.

  6. Cover the pan and let the curry simmer for about 5-7 minutes, or until the prawns are cooked through.

  7. Serve the Thai prawn curry over cooked rice and garnish with fresh cilantro.
