- 2 cups of vegetable broth
- 1 can (14 oz) of coconut milk
- 2 tablespoons of Thai red curry paste
- 1 tablespoon of soy sauce
- 1 tablespoon of brown sugar
- 1 tablespoon of lime juice
- 1 tablespoon of vegetable oil
- 1 onion, thinly sliced
- 2 cloves of garlic, minced
- 1 bell pepper, thinly sliced
- 1 carrot, julienned
- 1 cup of mushrooms, sliced
- 1 cup of broccoli florets
- 1 cup of tofu, cubed
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions

In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, bell pepper, and carrot. Sauté for 3-4 minutes until vegetables are slightly softened.

Add the Thai red curry paste and stir to coat the vegetables. Cook for another minute to release the flavors of the curry paste.

Pour in the vegetable broth, coconut milk, soy sauce, brown sugar, and lime juice. Stir well to combine. Bring the soup to a simmer and let it cook for 10 minutes.
