Ingredients

  • 3 egg yolks
  • 1 tablespoon water
  • 1 tablespoon fresh lemon juice
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons fresh tarragon, finely chopped
  • salt and pepper to taste

Instructions

  1. In a heatproof bowl, whisk together the egg yolks, water, and lemon juice.

  2. Place the bowl over a saucepan of simmering water, making sure the bottom of the bowl doesn’t touch the water.

  3. Continue whisking the egg mixture vigorously for about 3 minutes, until it thickens and becomes pale yellow in color.

  4. Slowly drizzle in the melted butter while whisking constantly, until the sauce is smooth and creamy.

  5. Remove the bowl from heat and stir in the chopped tarragon. Season with salt and pepper to taste.

  6. Serve the Bearnaise sauce immediately over grilled steaks or roasted vegetables.
