  • 1 cup raw cashews
  • 1 cup unsweetened almond milk
  • 2 tablespoons nutritional yeast
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • Pinch of turmeric (optional, for color)

Instructions

  1. In a small bowl, soak the cashews in hot water for at least 15 minutes, then drain.

  2. In a blender or food processor, combine the soaked cashews, almond milk, nutritional yeast, lemon juice, garlic powder, onion powder, paprika, salt, and turmeric (if using).

  3. Blend on high until smooth and creamy, scraping down the sides as needed.

  4. Transfer the mixture to a small saucepan and heat over low heat, stirring constantly, until warmed through.

  5. Use immediately as a sauce for pasta, nachos, vegetables, or any other dish you would typically use cheese sauce with.
