Ingredients

  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels, fresh or frozen
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno pepper, seeded and minced
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • Salt to taste

Instructions

  1. In a large bowl, combine the black beans, corn, red onion, cilantro, and jalapeno pepper.

  2. In a separate small bowl, whisk together the lime juice, olive oil, cumin, and salt.

  3. Pour the dressing over the black bean mixture and toss to combine.

  4. Refrigerate for at least 30 minutes to allow the flavors to meld.

  5. Serve chilled with tortilla chips or as a topping for grilled chicken or fish.
