Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 can corn kernels, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped cilantro
  • 1 avocado, diced
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine black beans, kidney beans, corn, cherry tomatoes, red onion, and cilantro.

  2. In a separate small bowl, whisk together lime juice, olive oil, salt, and pepper.

  3. Pour the dressing over the bean mixture and toss gently to combine.

  4. Add diced avocado on top and gently fold it in.

  5. Serve immediately or refrigerate for a few hours to allow flavors to meld.
