How To Make Roast Chicken & Roots with Lemon & Poppy Seed Sauce

Ingredients
- 1 whole chicken, about 4 pounds
- 4 carrots, peeled and cut into chunks
- 4 parsnips, peeled and cut into chunks
- 2 red onions, cut into wedges
- 2 tbsp olive oil
- Salt and pepper, to taste
- For the Lemon & Poppy Seed Sauce:
- 1/4 cup freshly squeezed lemon juice
- 2 tbsp honey
- 1 tbsp poppy seeds
- Salt and pepper, to taste
Instructions

Preheat the oven to 425°F (220°C).

Pat dry the chicken with paper towels and season generously with salt and pepper.

In a large roasting pan, toss the carrots, parsnips, and red onions with olive oil, salt, and pepper.

Place the chicken on top of the vegetables in the roasting pan.

Roast the chicken and vegetables in the preheated oven for 1 hour, or until the chicken is golden brown and cooked through.

While the chicken is roasting, prepare the lemon and poppy seed sauce. In a small bowl, whisk together the lemon juice, honey, poppy seeds, salt, and pepper.

Remove the chicken and vegetables from the oven and let them rest for a few minutes.

Serve the roast chicken with the roasted root vegetables and drizzle the lemon and poppy seed sauce over the top.
