Ingredients

  • 4 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 cup thinly sliced red onion
  • 1/2 cup chopped walnuts
  • 1/4 cup chopped fresh parsley
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon dijon mustard
  • 1 teaspoon celery seeds
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded cabbage, carrots, red onion, walnuts, and parsley.

  2. In a small saucepan, heat the apple cider vinegar, honey, dijon mustard, celery seeds, olive oil, salt, and pepper over medium heat. Whisk until well combined and heated through.

  3. Pour the warm dressing over the slaw mixture and toss until well coated.

  4. Serve immediately or refrigerate for up to 1 hour before serving.
